I've been "Pinteresting" quite a few healthy meal options for the past few months because of course I'm on my never-ending "I'm going to be healthy" mantra... (it's never ending of course because it's on-again, off-again, think Brittney circa 1999) Regardless, on my quiet Sunday afternoon I decided to pull up a quick and easy pancake recipe, mostly because my bananas are going bad. I was skeptical at first, because the pinterest blogger didn't have a final photo, however to my surprise those banana pancakes were DELISH!
For your very own taste buds, here is the 1-2-3 guide to making your very own Bitsy Banana Pancakes!
Ingredients you will need: 1 Ripe banana, 2 eggs, ground cinnamon and non-stick cooking spray
Tools you will need: Small mixing bowl, fork, spatula and small frying pan
Step 1: Open the banana and squish it into your bowl with a fork
Step 2: Crack open the 2 eggs and mix with the banana
Step 3: Mix in 1/2 tbs of ground cinnamon (secret ingredient!)
Step 4: Spray your small frying pan with non-stick cooking spray
Step 5: Pour a small amount of batter into the pan (the smaller the better as they can be tricky to flip!)
Step 6: Await for the small bubbles to form around the edge of the pancake and flip!
Step 6: Repeat steps 4-6 to make more than one pancake!
Hoorah! You have yourself a delicious (and heathy) breakfast! I topped mine off with a dollop of vanilla greek yogurt, maple syrup and cut up fresh strawberries and bananas. Let me know how your creation turns out and what you decide to top your pancakes with!
